The way to love someone
is to lightly run your finger over that person's soul
until you find a crack,
and then gently pour your love into that crack.

Quick Honey-balsamic Salmon recipe

Salmon with a honey-balsamic glaze, aka today's lunch

L comes home for lunch practically everyday.  If I'm home I cook, if not he eats a pj sandwich or sardines and crackers.  Today we walked in the front door together and I had no idea what to prep for lunch.  This was super easy ... delicious and fast.

Frozen salmon fillet - I began steaming two of these in a heavy skillet with a lid.
Next, the glaze:
1/4 c balsamic vinegar
2 big spoonfuls of local honey
2 big cloves of garlic finely grated
a chicken bouillon cube and a bit of water, maybe a couple tablespoons
would have used a shot of Dijon mustard, but I'm out ... on the list (there's a fresh loaf of rye bread on the countertop to remind me!)
put everything together in sauce pan to boil ... flipped fish ... chopped lettuce, red onion and an avocado, then poured bubbling glaze over fish while it was still in the skillet and turned fire off  ... plated Salmon and poured glaze over everything ... done.
Yummy.

Fitness pal computes the calorie count on that to be 425 per serving ...
4oz salmon = 130
2Tbsp honey = 128 (there may have been less - I didn't measure it well)
1/2 avocado = 114

may have been a tad too sweet, but very filling ... !
